La Conchota

A concha the size of the table.

It started as a joke in the panadería and turned into the reason people drive across town: a giant concha, scored and baked in house, and — if you are feeling brave — the barro-rojo mug of chocolate caliente to go with it. Order it for the table. Everyone gets a piece. That is rather the point of a place called loved by all.

Gaby & Charlie

Two chefs, one dining room, and a name that means everything.

Gaby Hinojosa and Charlie Gonzalez met at the Culinary Institute of America in New York. Between them they have cooked at Noma in Copenhagen and at Signature under Andrew Weissman. In 2022, with those kitchens behind them, they chose San Antonio to build Panfila — and named it after the word their family used for someone everybody loves.

The black-and-white portraits on the dining-room walls are their family. The neon behind the bar says it plainly.
